As you may know, I went to Pizza Expo last month in Las Vegas. It was a blast and very educational. I got to meet and schmooze with some of my pizza heroes and I got to ask a lot of pizza questions. I was able to record some wonderful interviews. There will be some surprising pizza interviews coming up in the near future. I even got to meet the
creator of a Pizza Night Light...
One of the folks I spoke with was Tim Huff, of Expert Baker, of General Mills Flours. He spoke about hydration methods for pizza makers, That is the amount of water you put in your dough.
