Hello, I hope you are doing well.

A while back I interviewed my friend Tony Gemignani about a pizza mission to Naples.

Seems that Tony was contacted by the makers of Caputo flour and asked to help develop a flour for New York Pizza. Caputo makes incredible flour but the flour is made for Neapolitan pizza that needs to be cooked in a high heat oven.

Tony explained, he put together a Dream Team of Pizza Makers and helped to create a flour that can be used in any oven including the home oven.

The result was pizza history! I was so amazed, I had to get this flour myself...
