I was able to record a conversation with Peter Reinhart at Pizza Expo , which for me was extraordinary.
He was getting ready to present a Workshop at Pizza Expo about how Pizza Restaurant owners could easily make artisan bread as well as pizza.
We discussed this and the fact that if you make pizza you can make bread. If you make bread, you can make pizza. And of
course this applies to the home pizza maker as well.
Then the conversation turned a corner when I asked him to talk about the difference between good pizza and great pizza.
His answer made me smile. I felt exactly the same way he did!
