I wanted to share with you an interview I did a while back with a Chef called Daddy Jack.
I have been to his restaurant many times over the years. He is a great cook who also share many of his cooking tips through his YouTube Channel: Cooking with the Blues.
He is a Chef, video creator and a Blues promoter.

In the video he shares his entire story of how he got into cooking as well why he diecided to get into the restaurant business.
While he gives some great pizza tips, there is one that really stands out for me.
The best tip is to Pre-frement you dough. That is make your dough a day or 2 (or 4) days ahead of time and let the dough proof in the fridge.
