I hope you are doing well.
One of my favorite pizza makers is Tony Gemignani. His pizza skills are extraordinary. He is continually working at perfecting the craft of pizza making. As a matter of fact he has a "Respect the Craft" tattoo on his hand.
He is kind of like the Michael Jordan or LeBron James of pizza. His love of pizza and sharing his knowledge is
boundless.
I have known Tony for a number of years. The first time he was in Hawaii we got together for lunch. I was thinking I could take him and his wife, Julie for an exotic Hawaiian meal. Maybe a sushi bar, or dim sum. Perhaps a Korean restaurant, I thought.
Where do want to go for lunch. "Pizza" he said. And that's what we did. We ate pizza.
The last time I spoke with him, I asked him to give me some
of his pizza making tips.
One of the things he talked about was about using finishing ingredients after the pizza comes out of the oven.
This for me is a game changer.
